VIETNAMESE SWEET CHILI SAUCE
THIS MAKES A BUTT LOAD OF SAUCE. Put it on your summer rolls, chicken, ribs, veggies...hell this goes great with anything! Just store it in your refrigerator when not using it.
1 Cup water
1 cup rice wine vinegar (or white vinegar)
2 cups sugar
3 garlic cloves, whole, peeled
2 minced red chilies or 2 tbls sambal oelek
3 to 4 dashes fish sauce
Get a non reactive pan on the stove and put all of your ingredients in it. Get that flame about medium, and let that sauce boil, and reduce about 50% or until syrup! Taste for seasonings and add as you need! Let cool, and enjoy!!
